A little about me and the ONLY marinated cucumber recipe that matters
Hi 👋 I’m Amanda! I’ve always wanted be be a “blogger” ( weird dream, I know) but the admin of having a blog is a little much for me so I thought a newsletter is a better place to start.
I’m a former teacher turned Stay-at-Home-Mom of two toddlers who desperately needs a creative outlet. I’ll be sharing musings on motherhood, product recommendations, and daily life things. Let’s see where this journey takes us and thanks for being here!
Things I'm Into
August has flown by! We went on our first vacation as a family of four to the beach and a hurricane came with us. It wasn’t really the fun in the sun we were after. See above that we mostly skipped rocks in the flooded driveway the whole week. We are preparing to send our oldest to preschool for the first time and nothing has me more excited and yet heartbroken. I am SO ready for all things fall but considering it is still 100 degrees outside, I will be waiting for the crisp air a little longer. Here are the things getting me through in August.
What I’m reading
I read How to Keep House While Drowning by KC Davis and WOW it’s a 5 star, must read for me. This is a book that helps you learn actual strategies for tackling cleaning and other to-do lists but more importantly it reframes your thoughts on cleanliness as it relates to yourself. Taking the guilt out of cleaning and messiness and focusing on what can realistically be done to keep our house functional with two littles is essential.
What I’m eating
Sometimes you just have to eat a whole cucumber… everyday. I am a big fan of some marinated cucumbers that I got at the store but they are hard to find so here is my copycat recipe and it is *Chefs Kiss*. Combine these and store in the fridge.
1 large or 3 mini cucumbers
1 quarter red onion
1/2 cup white vinegar
1 cup water
1 Tablespoon apple cider vinegar
3 Tablespoons sugar
Salt to taste
What I’m lusting after
I have been seeing little flats everywhere and honestly I’m not sure they would look good on me but THESE have my heart. The shape, the satin, the red! Should I do it?
What my kids are into
My son is into “snack plates”. This happened after our beach trip where my aunt would put out veggies, dips, and charcuterie before dinner so the kids (and adults) were entertained while cooking. Now my son gets so excited for me to build him one after his nap and they have been pretty fun. I try to put on some protein, veggie, fruit and carb but it MUST be had on this plate or in toddler fashion all fun is lost. I’ll be doing a newsletter on snack plate ideas next month.
